Spanish Chicken with Chorizo


Let me begin this post by saying that my husband doesn’t like any “exotic” food and by exotic I mean anything outside the realm of steak and potatoes. 🙂  He, however, LOVED this dish.  It is so flavorful and has such a warmth about it.  I know this will be in regular rotation for dinner around here from now on.  Not only is this a nice change of pace from the usual it is quick, easy, and economical as well.  I picked up my chicken thighs for 79 cents a pound!  Woo hoo!!  It’s a winner all the way around!

Spanish Chicken with Chorizo

  • 6 chicken thighs (WITH the skin and bone)
  • 2 Tablespoons olive oil
  • 1 medium onion, roughly chopped
  • 6 oz. chorizo sausage, mild (removed from casing and broken up into 1″ pieces)
  • 1 tsp. dry oregano
  • salt to taste
  • zest of one orange

Preheat oven to 425.  Pour oil into large baking dish.  Rub oil onto chicken and place skin side up in dish.  Sprinkle with salt and oregano.  Add sausage and onion.  Sprinkle all with orange zest.  Bake for 1 hour basting after 30 minutes.

That’s it folks!  I served it over yellow rice and the flavors worked beautifully together.
